Date Nut Bars
1/3 cup boiling water
2 cups dates, pitted and
chopped
½ cup butter
1/3 cup white sugar
2/3 cup brown sugar
2 eggs
1 tsp. vanilla extract
1 cup flour
¼ tsp. baking soda
¾ tsp. salt
¼ tsp. cinnamon
1/8 tsp. ground nutmeg
1 cup chopped nuts
¼ cup confectioners’ sugar
In a small bowl, pour boiling
water over dates and set aside to cool. Preheat oven to 325 degrees. Grease a
10X10 inch baking dish.
In a medium bowl, cream
together the butter and brown and white sugar. Add eggs, one at a time, beating
well after each addition. Add the vanilla. Add the dates, including any water.
Mix well.
Sift together the flour, baking
soda, salt, cinnamon, and nutmeg. Stir into the date mixture. Stir in the nuts.
Spread the mixture evenly in
the prepared pan and bake for 45 minutes. When cool, cut into bars and dust
each with confectioners’ sugar.
