Pecan Pie Muffins

A favorite guest shared this very easy recipe with me along with fresh pecans right from Texas. These muffins taste just like a slice of pecan pie. Heavenly!

Ingredients:

2 cups flour
2 cups brown sugar, firmly packed
2 large eggs
1 1/2 sticks butter, melted
1 cup chopped pecans
1/2 tsp. vanilla extract

Mix all ingredients together by hand in a large bowl, stirring just until moistened. Scoop into a non-stick muffin tin that has been sprayed with Pam and lightly floured. Bake at 350 degrees for 22-25 minutes. Middle will stay soft. Serve warm.
Yield: 1 dozen
