Banana Crumb Muffins

Banana Crumb Muffins
Unlike dense banana bread, these muffins are so delicate and light, they practically melt in your mouth.

Banana Crumb Muffins

1 ½ cups flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt

3 bananas, mashed
¾ cup white sugar
1 egg, slightly beaten
1/3 cup melted butter

1/3 cup brown sugar
2 TB. flour
1/8 tsp. ground cinnamon
2 TB. butter


Preheat oven to 375 degrees. Lightly grease 12 regular muffin tins, or 6 jumbo muffin tins.

In a large bowl, mix together 1 ½ cups flour, baking soda, baking powder, and salt. In another bowl, mix together the bananas, white sugar, egg, and melted butter. Stir the banana mixture into the flour mixture, until just blended. Spoon into prepared muffin tins.

In a small bowl, combine the brown sugar, 2 TB. flour, and cinnamon. Cut in 2 TB. butter until it forms a crumb mixture. Sprinkle topping over muffins.

Bake for 20 mins. for small muffins and 25 mins. for jumbo size or until a knife inserted into the center of a muffin comes out clean.
